Ingredients for making honey bread cake:
For the cake:
2½ cups of wheat flour (350 grams)
1 cup brown sugar
¾ cup of water (180 milliliters)
½ cup of milk (120 milliliters)
½ cup of honey (150 grams)
2 tablespoons of powdered chocolate
1 teaspoon of ground cinnamon
1 teaspoon of baking soda
For the brigadeiro filling:
½ can of condensed milk
100 grams of chocolate bars (min. 30% cocoa)
3 tablespoons of sour cream
1 tablespoon of butter
How to make Honey Bread Cake:
Prepare the honey bread cake by placing the sugar and water in a pan. Place over low heat and leave for 20 minutes without stirring, until you get a syrup with the sugar grains dissolved. Turn off and let it cool down a bit.
In a bowl place the sifted dry ingredients: wheat flour, chocolate, cinnamon and baking soda. Add the syrup from the previous step and mix well with an electric mixer or with a fouet.
In a blender, beat milk, egg yolks and honey. Add this liquid to the cake batter and stir until well blended. Turn the oven on at 180ºC.
Tip: To avoid the smell and taste of egg, sift the yolks in order to filter the skin or skin of them.
To get a fluffy and full-grown honey bun beat the egg whites in snow, until they are very voluminous and firm. Add little by little to the honey bread mixture, gently incorporating, so as not to lose air.
Tip: To beat whites faster, add a pinch of salt or a few drops of lemon juice to them before starting to beat.
Line a 30 x 30 cm rectangular or square pan with parchment paper. Put the dough and, if you like, sprinkle with chocolate confections. Bake it in the oven at 180ºC for 20 minutes or until it passes the toothpick test.
While the cake bakes, prepare the filling for the honey bread: place the condensed milk and butter in a pan, cook on medium heat to low and keep stirring for 5 minutes or until you can see the bottom of the pan, as in the photo.
Remove the pan from the heat, add the chopped chocolate and the cream and stir until incorporated. Bring it back to the heat and stir for 1-2 minutes or until the point of soft brigadeiro.
